It All Started Back In...
The Lime Truck started in 2010 as one yellow-and-green truck parked on a corner in Orange County, California. Sixteen years and two Food Network championships later, we're a six-truck fleet catering weddings, corporate events, and private parties from San Diego to Los Angeles — and we still cook every dish the way we did on day one: scratch-made, generously seasoned, and 100% free of seed oils.
Our founder, chef Daniel Shemtob, set out to prove that food trucks could deliver a real restaurant experience — elevated Cali-Mex cooking, served fast, with the kind of hospitality usually reserved for white tablecloths. The Lime Truck launched with a simple mission; to create the best possible dining experience for our guests, to introduce a surprisingly elevated food truck concept to an industry begging to be disrupted, and to have a ton of fun while doing it!
Our victory on Season 2 was what took us from being a local OC favorite to a celebrity-status food truck that couldn't park anywhere without attracting a massive crowd! Our fleet and our team started expanding.


As our fanbase and our service areas continued to expand beyond Orange County to Los Angeles, the accolades kept rolling in! For three years in a row, The Lime Truck was selected as one of the top 5 food trucks in America by Yahoo!
When we started the food truck back in 2010, we never imagined we would still be serving up our signature elevated Cali-Mex cuisine a year later. So after being in business for a decade, The Lime Truck's mission evolved in a big way.

With all the challenges during the pandemic it felt damn good to win something. Being invited back to compete again in The Great Food Truck Race was a huge honor. Coming home with the title of All Star Champions really just solidified our place as the top food truck in America.

After 16 years of spreading joy and a deep, undying love of tacos throughout our community, it was time to take our business to the next level. We decided to start working towards offering franchise opportunities!
The Lime Truck officially starts offering exclusive franchise opportunities in select areas. We also launched the Food Truck Mogul Academy - an online community for learning everything there is to know about building a successful food truck empire!

We partnered with Zero Acre Farms to cook every dish in cultured oil — no canola, soybean, or vegetable oils. It costs more, but it tastes cleaner and feels better afterward.
Our salsas, marinades, slaws, and sauces are made fresh each morning in our commissary kitchen. No shortcuts, no shelf-stable shortcuts dressed up as 'house-made.'
Catering should feel like a restaurant experience, not a cafeteria line. Our staff is trained to host — greeting guests, explaining the menu, and keeping the line moving fast.
From a 30-person backyard birthday to a 1,500-guest wedding, our 6-truck fleet, full-service buffet setups, and butler-passed appetizer service scale to whatever you need.
